各位知識加的大大們好小弟在一間便當店工作是負責油炸,入門不久,許多要自己摸索可是碰到了瓶頸,令我真的很頭痛。主要的就是腿排.魚排.雞腿.排骨尤其是雞腿,特別難炸炸的不好看,自己炸的排骨表面都平平的沒顆粒也不好看請問溫度要怎麼控制?時間要怎麼控制?淹料要怎麼配比較好?麵漿要怎�
